Ingredients
- Sauce:
- 1/4 cup + 2 TBSP Ketchup
- 1/2 cup + 1 TBSP Sugar
- 3/4 cup H2O
- 2 TBSP soy sauce
- 2 TBSP corn starch mixed
- Batter for Tofu:
- 1 cup flour
- 1/4 tea baking soda
- 3/4 tea baking powder
- 1/4 tea salt
- 1/2 cup H2O
- 13 oz Tofu cubed
- 8 oz diced green & red pepper
- 6 oz sliced onion
- 3/4 cup pineapple pieces
Method
- For sauce, combine everthing but 1/4 c H2O + 2TBSP corn starch and bring to boil. Once boiling, add rest of H2O and corn starch. Cook briefly until thickened, take off heat.
- For tofu, combine batter ingrediants & coat dry cubes of tofu. Deep fry at 350 degrees.
- Saute onions and peppers until cooked, combined with fried tofu, pineapple bits and sauce. Serve over rice.
