Ingredients

  • 1/2 c. minced onion
  • 1/4 c. butter
  • 2 c. water
  • 1/2 c. white wine
  • 1/2 c. thinly sliced celery
  • 1 c. thinly sliced carrot
  • 1 c. diced potato
  • 1 bay leaf
  • 1/2 tsp. thyme
  • 2 tsp. salt
  • pepper to taste
  • 1 lb. haddock or cod fillets, diced
  • 3 c. milk
  • 1/4 c. flour
  • 1 c. half and half cream
  • 6 oz. flaked crab meat
  • parsley

Method

  • Saute onion in butter.
  • Add water, wine, vegetables, seasonings and fish fillets.
  • Simmer 20 minutes.
  • Gradually add 1 cup milk to flour to make a thin paste.
  • Add to hot mixture, stirring and cooking until thick.
  • Gradually add rest of milk, half and half, crab meat and parsley.
  • Heat thoroughly before serving.
