Ingredients
- 6 hard-boiled eggs, well chilled
- 1 lb. ground breakfast sausage
- 1/2 c. flour
- 2 eggs, beaten
- 3/4 c. fine bread crumbs
- vegetable oil (for frying)
Method
- Boil eggs and set aside.
- Divide sausage into 6 portions; roll each egg in flour and with hands, press portion of the sausage around egg.
- Dip sausage wrapped eggs into beaten eggs and roll in bread crumbs.
- Heat oil to 350°; cook each egg in oil for 4 to 5 minutes.
- Drain on paper towel.
