Ingredients

  • 1 frying chicken (2 1/2 to 3 pounds cut in serving pieces)
  • 1/3 cup flour
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon crushed thyme
  • 2 pounds potatoes
  • 1/4 cup butter
  • 1 package dry onion soup mix
  • 2 1/4 cups boiling water

Method

  • Combine flour, salt, pepper, paprika, and thyme. Reserve 2 tablespoons flour mixture and use remaining to coat chicken pieces. Brown chicken on all sides in butter. Arrange in center of large shallow casserole.
  • Peel potatoes and slice thinly. Arrange layers of potatoes around chicken. Sprinkle each layer with dry onion soup mix and reserved seasoned flour. Pour any remaining drippings, from browning chicken over potatoes. Pour boiling water over all. Cover and bake in 350 degree oven for 45 minutes. Uncover and bake an additional 15 minutes until chicken and potatoes are tender.
