Ingredients

  • 4 large baked potatoes
  • 1/3 c. milk (add more if needed)
  • 2 tsp. sauteed onions, chopped
  • 3/4 c. canned or cooked salmon
  • 1 clove garlic, minced
  • salt & pepper to taste
  • Dash of poultry & Italian seasoning
  • Chopped parsley
  • Fried onions, bacon bits, Cheddar cheese (if desired for garnish)

Method

  • Bake potatoes.
  • Cut in half and scoop out insides.
  • Mash with next 7 ingredients until smooth.
  • Refill potato shells without pressing down.
  • Sprinkle with fried onions, bacon bits or cheese if desired.
  • Brown in 450° oven about 10 minutes.
  • Serve with salad or vegetable.
