Ingredients
- 4 large baked potatoes
- 1/3 c. milk (add more if needed)
- 2 tsp. sauteed onions, chopped
- 3/4 c. canned or cooked salmon
- 1 clove garlic, minced
- salt & pepper to taste
- Dash of poultry & Italian seasoning
- Chopped parsley
- Fried onions, bacon bits, Cheddar cheese (if desired for garnish)
Method
- Bake potatoes.
- Cut in half and scoop out insides.
- Mash with next 7 ingredients until smooth.
- Refill potato shells without pressing down.
- Sprinkle with fried onions, bacon bits or cheese if desired.
- Brown in 450° oven about 10 minutes.
- Serve with salad or vegetable.
