Ingredients
- 2 medium zucchini, cut in 1/4-inch slices
- 1 small eggplant, cut into 1/2-inch cubes
- 1 large green pepper, cut in strips
- 1 medium onion, thinly sliced
- 1 pt. cherry tomatoes
- 3 oz. jar pimento stuffed olives, drained and cut in half
- 1/2 tsp. basil
- dash of Italian seasoning
- 1/4 tsp. pepper
Method
- In large skillet, electric or not, cook veggies until tender, about 10 minutes, stirring occasionally.
- May need to add a little water.
