Ingredients
- 1 medium head cauliflower
- 1/2 c. mayonnaise or salad dressing
- 1 Tbsp. instant minced onion
- 1/2 tsp. dry mustard
- 1/4 tsp. salt
- 4 slices Colby cheese
- paprika
Method
- Cut cone shape wedge out of cauliflower core.
- Place cauliflower and 1/4 cup water in a 1 1/2-quart microproof casserole.
- Cover and cook on High (maximum power) for 9 minutes; drain.
- Mix mayonnaise, onion, mustard and salt.
- Spoon sauce over cauliflower.
- Lay cheese slices on top.
- Cook, uncovered, on 70% power (roast) for 1 minute or until cheese is melted.
- Sprinkle with paprika.
- Let stand 2 minutes before serving.
- Serves 6.
