Ingredients

  • 1 medium head cauliflower
  • 1/2 c. mayonnaise or salad dressing
  • 1 Tbsp. instant minced onion
  • 1/2 tsp. dry mustard
  • 1/4 tsp. salt
  • 4 slices Colby cheese
  • paprika

Method

  • Cut cone shape wedge out of cauliflower core.
  • Place cauliflower and 1/4 cup water in a 1 1/2-quart microproof casserole.
  • Cover and cook on High (maximum power) for 9 minutes; drain.
  • Mix mayonnaise, onion, mustard and salt.
  • Spoon sauce over cauliflower.
  • Lay cheese slices on top.
  • Cook, uncovered, on 70% power (roast) for 1 minute or until cheese is melted.
  • Sprinkle with paprika.
  • Let stand 2 minutes before serving.
  • Serves 6.
