Ingredients

  • 2 1/4 lbs potatoes, peeled and chopped
  • 2 None small apples, sliced into rings
  • 1 tbsp lemon juice
  • 2 None onions, cut into rings
  • 4 tbsp plain flour
  • 12 None slices calf's liver
  • 2 tbsp sunflower oil
  • 2 tbsp butter
  • 5 None thyme stems, leaves picked
  • 3/4 cup milk
  • Pinch None grated nutmeg

Method

  • Cook the potatoes in boiling, salted water for 15-20 mins until tender. Meanwhile, drizzle the apple with lemon juice. Coat the onion rings in flour and tap off the excess. Coat the liver in flour and tap off the excess.
  • Heat the sunflower oil in a large frying pan, add the liver and fry for 3-4 mins, turning. Season then remove from the pan and keep warm. Add 1 tbsp butter to the pan, followed by the apple and onion slices and fry for 4-5 mins until golden. Stir in the thyme leaves.
  • Drain the potatoes then mash with the milk and 1 tbsp butter. Stir in the nutmeg and season. Divide the mashed potatoes, liver, onion and apple between 4 plates then serve.
