- 4 Tbsp. butter
- 6 chicken breasts
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 lb. mushrooms, sliced
- 1/2 c. chicken broth
- 1 Tbsp. butter
- 1 onion, chopped
- 2 (4 oz.) cans diced green chilies
- 2 cloves garlic, minced
- 2 Tbsp. flour
- 1/2 c. chicken broth
- 1 c. sour cream
- 1 c. grated Jack cheese
- 1/4 c. pine nuts
Method
- Melt butter in skillet.
- Add chicken (skinned and cut in large pieces).
- Cook until browned (10 to 12 minutes).
- Salt and pepper. Arrange chicken in 9 x 13-inch baking dish.
- Add mushrooms to skillet and saute 3 minutes.
- Scatter mushrooms over chicken and pour chicken broth over all.
- Cover; bake at 350° for 15 minutes.
