Ingredients

  • 4 Tbsp. butter
  • 6 chicken breasts
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 lb. mushrooms, sliced
  • 1/2 c. chicken broth
  • 1 Tbsp. butter
  • 1 onion, chopped
  • 2 (4 oz.) cans diced green chilies
  • 2 cloves garlic, minced
  • 2 Tbsp. flour
  • 1/2 c. chicken broth
  • 1 c. sour cream
  • 1 c. grated Jack cheese
  • 1/4 c. pine nuts

Method

  • Melt butter in skillet.
  • Add chicken (skinned and cut in large pieces).
  • Cook until browned (10 to 12 minutes).
  • Salt and pepper. Arrange chicken in 9 x 13-inch baking dish.
  • Add mushrooms to skillet and saute 3 minutes.
  • Scatter mushrooms over chicken and pour chicken broth over all.
  • Cover; bake at 350° for 15 minutes.
