Ingredients

  • 1 c. (2 sticks) unsalted butter (room temperature)
  • 1/2 c. sugar
  • 1 tsp. vanilla
  • 1/4 tsp. salt
  • 1 large egg yolk
  • 1 1/4 c. flour
  • 1 c. ground pecans
  • powdered sugar

Method

  • Cream butter, sugar, vanilla, salt and egg yolk with electric mixer until smooth. Combine flour with pecans and gradually beat into flour mixture. Wrap in waxed paper, then plastic wrap. Refrigerate at least 1 hour or overnight. Shape dough into 1-inch balls and place 1 1/2-inches apart on ungreased cookie sheets. Bake in preheated oven at 350° for 12 to 15 minutes. Immediately place in bowl with powdered sugar and roll around to coat. Makes 4 dozen.
