Ingredients

  • 1 c. saltine cracker crumbs
  • 2/3 c. milk
  • 1 egg, beaten
  • 2 Tbsp. finely chopped onion
  • 2 Tbsp. butter or margarine, melted
  • 1 Tbsp. lemon juice
  • dash of pepper
  • 1 2/3 c. (14 oz. can) Libby's Pacific pink salmon, drained and flaked
  • Cucumber Sauce

Method

  • In medium bowl, combine crumbs, milk, egg, onion, butter, lemon juice and pepper.
  • Stir in salmon.
  • Spoon into greased 8 1/2 x 4 1/2-inch loaf dish.
  • Smooth top.
  • Bake in preheated 350° oven for 35 to 45 minutes.
  • Let stand 5 minutes before slicing.
  • Serve with Cucumber Sauce.
