Ingredients
- 1 c. saltine cracker crumbs
- 2/3 c. milk
- 1 egg, beaten
- 2 Tbsp. finely chopped onion
- 2 Tbsp. butter or margarine, melted
- 1 Tbsp. lemon juice
- dash of pepper
- 1 2/3 c. (14 oz. can) Libby's Pacific pink salmon, drained and flaked
- Cucumber Sauce
Method
- In medium bowl, combine crumbs, milk, egg, onion, butter, lemon juice and pepper.
- Stir in salmon.
- Spoon into greased 8 1/2 x 4 1/2-inch loaf dish.
- Smooth top.
- Bake in preheated 350° oven for 35 to 45 minutes.
- Let stand 5 minutes before slicing.
- Serve with Cucumber Sauce.
