Ingredients

  • 1 large eggplant
  • salt
  • 1 medium onion, chopped
  • 1/2 can tomatoes (with juice)
  • bacon drippings
  • about 1/2 c. crumbled cornbread
  • 1/2 c. grated cheese

Method

  • Peel and chop
  • eggplant.
  • Cook in
  • water until tender. Salt to taste.
  • When
  • tender,
  • drain
  • off
  • water and mash with potato masher.
  • Add
  • onion
  • and tomatoes. Add bacon drippings to season. Mix cornbread and most of grated cheese and add to eggplant mixture.
  • Sprinkle
  • remaining
  • grated
  • cheese
  • over mixture. Bake in greased dish at 350° about 30 to 35 minutes.
