Ingredients
- 1 large eggplant
- salt
- 1 medium onion, chopped
- 1/2 can tomatoes (with juice)
- bacon drippings
- about 1/2 c. crumbled cornbread
- 1/2 c. grated cheese
Method
- Peel and chop
- eggplant.
- Cook in
- water until tender. Salt to taste.
- When
- tender,
- drain
- off
- water and mash with potato masher.
- Add
- onion
- and tomatoes. Add bacon drippings to season. Mix cornbread and most of grated cheese and add to eggplant mixture.
- Sprinkle
- remaining
- grated
- cheese
- over mixture. Bake in greased dish at 350° about 30 to 35 minutes.
