Ingredients

  • 3 c. cool water
  • 1/2 c. rice
  • 1/2 teaspoon salt
  • 1 (3 ounce.) pkg. red Jello
  • 1/2 c. sugar
  • 1 sm. can crushed pineapple
  • 1/2 c. cream, whipped or possibly 1 pkg. whipped topping, prepared

Method

  • Combine water, rice and salt in heavy saucepan.
  • Cover and cook on high to boiling.
  • Reduce heat to simmer and cook 20-25 min.
  • Remove from heat and add in Jello (any red flavor) and sugar.
  • Stir to dissolve.
  • Cold to tepid and stir in pineapple.
  • Chill till cool but not set.
  • Gently stir in whipped cream.
  • Turn into mold or possibly pretty serving bowl.
  • Keeps well in refrigerator.
  • A favorite with children too.
