Ingredients
- 6 to 8 potatoes
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 lb. Velveeta cheese, cubed
- 1 (4 oz.) can mushrooms
- 1 c. Ro-Tel tomatoes
- 1/2 stick oleo
Method
- Boil potatoes until done; cool.
- Slice and place in casserole dish.
- Saute onion and bell pepper in oleo.
- Add cheese, Ro-Tel tomatoes and mushrooms.
- Pour over potatoes.
- Bake in oven until bubbly.
