Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons Dijon mustard
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground cumin
  • 1/8 teaspoon ground cardamom (optional)
  • 1 head romaine lettuce, torn
  • 1 small red onion, thinly sliced
  • 1/2 cup salted cashews, chopped*
  • 1/3 cup rinsed and drained chickpeas

Method

  • Whisk together first 5 ingredients and, if desired, cardamom in a large bowl until blended. Add lettuce and remaining ingredients, tossing gently to coat. Serve immediately.
  • *Pecans may be substituted for cashews.
