- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 teaspoons Dijon mustard
- 1/8 teaspoon salt
- 1/8 teaspoon ground cumin
- 1/8 teaspoon ground cardamom (optional)
- 1 head romaine lettuce, torn
- 1 small red onion, thinly sliced
- 1/2 cup salted cashews, chopped*
- 1/3 cup rinsed and drained chickpeas
Method
- Whisk together first 5 ingredients and, if desired, cardamom in a large bowl until blended. Add lettuce and remaining ingredients, tossing gently to coat. Serve immediately.
- *Pecans may be substituted for cashews.
