Ingredients

  • 2 lb. crabmeat (fresh), picked good
  • 1 lb. butter, melted (not runny)
  • 1 doz. plus 3 eggs
  • 2 bunches spring onions, sliced thin
  • 1/2 pkg. parsley
  • 1 bell pepper, finely chopped
  • 1 lb. plain flour

Method

  • Pick through crabmeat to get out any shell.
  • Mix flour and eggs together until smooth and creamy.
  • Place butter, crabmeat, onions, parsley and pepper in a deep bowl and mix well together.
  • Add flour mixture and deep bowl with ingredients to a cooking pot and cook for 5 to 8 minutes.
  • Shape into oblong rolls; roll in crackers. Freeze.
  • When ready to serve, deep fry in hot oil 10 to 12 minutes.
