Ingredients
- 2 lb. crabmeat (fresh), picked good
- 1 lb. butter, melted (not runny)
- 1 doz. plus 3 eggs
- 2 bunches spring onions, sliced thin
- 1/2 pkg. parsley
- 1 bell pepper, finely chopped
- 1 lb. plain flour
Method
- Pick through crabmeat to get out any shell.
- Mix flour and eggs together until smooth and creamy.
- Place butter, crabmeat, onions, parsley and pepper in a deep bowl and mix well together.
- Add flour mixture and deep bowl with ingredients to a cooking pot and cook for 5 to 8 minutes.
- Shape into oblong rolls; roll in crackers. Freeze.
- When ready to serve, deep fry in hot oil 10 to 12 minutes.
