Ingredients
- 1 each apples red, cooking type, quartered, cored
- 1 tablespoon soy sauce, tamari
- 4 each cornish game hens
- 1 cup white wine dry, white or rose
- 3 tablespoons orange marmalade
- 1/2 each lemon juice and rind
- 1/2 teaspoon salt
- 18 teaspoon black pepper
Method
- Dip apple quarters into soy sauce, and put one into the cavity of each hen.
- Stir wine, marmalade, lemon rind and juice, salt and pepper into remaining sauce and brush over hens.
- Place hens breast side down in a five quart cooker, and pour the remaining sauce over all.
- Cover and cook on low for 7 hours.
- (If possible, baste after three hours.
- )Arrange hens on a heated serving platter and serve with canned pear halves filled with prepared chicken flavored stuffing mix, if you wish.
