Ingredients

  • 1 each apples red, cooking type, quartered, cored
  • 1 tablespoon soy sauce, tamari
  • 4 each cornish game hens
  • 1 cup white wine dry, white or rose
  • 3 tablespoons orange marmalade
  • 1/2 each lemon juice and rind
  • 1/2 teaspoon salt
  • 18 teaspoon black pepper

Method

  • Dip apple quarters into soy sauce, and put one into the cavity of each hen.
  • Stir wine, marmalade, lemon rind and juice, salt and pepper into remaining sauce and brush over hens.
  • Place hens breast side down in a five quart cooker, and pour the remaining sauce over all.
  • Cover and cook on low for 7 hours.
  • (If possible, baste after three hours.
  • )Arrange hens on a heated serving platter and serve with canned pear halves filled with prepared chicken flavored stuffing mix, if you wish.
