Ingredients

  • 4 small pizza bases (20cm diameter)
  • 1/2 cup eggplant dip Safeway 1 ea For $1.28 thru 02/09
  • 1 cup grated mozzarella cheese, firmly packed
  • 2 roasted capsicum fillets, sliced
  • 1 red onion, thinly sliced
  • 6 thin slices prosciutto, cut into smaller strips
  • 80g Greek feta, crumbled
  • 40g baby rocket leaves, tossed in
  • 2 teaspoons extra virgin olive oil and
  • 2 teaspoons lemon juice

Method

  • Spread eggplant dip over pizza bases.
  • Sprinkle with half the mozzarella, then top with capsicum, onion, prosciutto, feta and remaining mozzarella.
  • Bake pizzas in a hot oven 220C for 10 minutes, or until just golden.
  • Scatter with dressed rocket and serve immediately.
