Ingredients

  • 5 lb. eye of the round roast
  • 1 carrot
  • 4 cloves garlic
  • salt and pepper

Method

  • Trim eye of the round roast.
  • Make gashes 1 1/2 to 2-inches apart the length of the roast and in three rows.
  • Alternately insert slivers of raw carrot and tiny slivers of garlic.
  • Salt heavily and pepper.
  • Bake in open pan at 350° for about 3 hours or until desired doneness.
  • Add enough water in pan during cooking to keep from sticking but be careful not to add too much.
