Ingredients
- 5 lb. eye of the round roast
- 1 carrot
- 4 cloves garlic
- salt and pepper
Method
- Trim eye of the round roast.
- Make gashes 1 1/2 to 2-inches apart the length of the roast and in three rows.
- Alternately insert slivers of raw carrot and tiny slivers of garlic.
- Salt heavily and pepper.
- Bake in open pan at 350° for about 3 hours or until desired doneness.
- Add enough water in pan during cooking to keep from sticking but be careful not to add too much.
