Ingredients

  • 4 sq. bitter chocolate
  • 1 c. light cream
  • 2 c. sugar
  • 1/2 tsp. salt
  • 2 Tbsp. butter
  • 1 tsp. vanilla
  • 1/2 lb. broken pecans

Method

  • Combine chocolate and cream and cook over low heat, stirring constantly until smooth.
  • Add sugar and salt; stir until sugar is dissolved and mixture boils.
  • Cook without stirring until small amount of mixture forms a soft ball in cold water (236°).
  • Remove from heat; add butter and vanilla without stirring.
  • Cool to lukewarm (110°), then beat until creamy.
  • Add nuts and turn at once into buttered pan.
  • When firm, cut into squares.
