Ingredients
- 4 sq. bitter chocolate
- 1 c. light cream
- 2 c. sugar
- 1/2 tsp. salt
- 2 Tbsp. butter
- 1 tsp. vanilla
- 1/2 lb. broken pecans
Method
- Combine chocolate and cream and cook over low heat, stirring constantly until smooth.
- Add sugar and salt; stir until sugar is dissolved and mixture boils.
- Cook without stirring until small amount of mixture forms a soft ball in cold water (236°).
- Remove from heat; add butter and vanilla without stirring.
- Cool to lukewarm (110°), then beat until creamy.
- Add nuts and turn at once into buttered pan.
- When firm, cut into squares.
