Ingredients
- 2 peaches, ripe and cut into slices
- 1/3 cup water
- 1/3 cup brandy
- 1/2 cup brown sugar
- 1/4 cup heavy creme
- 2 tbsp vanilla
- 1 tbsp salt
- 1 tbsp cinnamon
Method
- In a saute pan whisk together the water and brandy over medium-low heat. When the mix is luke-warm begin gradually whisking in the brown sugar. It is important to do this over a low heat in order to properly melt the sugar and avoid a "grainy" texture.
- When all the sugar has been added, continue whisking and add in the heavy creme, vanilla, salt and cinnamon
- When that is well mixed, add in the peach slices and simmer for 25-30 minutes, or until the liquid is an almost the consistency of syrup.
- Best served warm.
