Ingredients
- 1 lg. pkg. yellow rice (cooked according to directions)
- 1 green pepper, diced
- 1 red pepper, diced
- 1 med. or lg. onion, diced
- 1 c. fresh mushrooms, diced
- 1 c. carrots (cut up very small)
- 2 cloves fresh garlic, diced
- 1 pkg. frozen corn
- 1 lb. fresh shrimp
Method
- While yellow rice is cooking: saute all other ingredients in olive oil.
- Sprinkle lemon juice over them.
- Combine all ingredients for a healthy, hardy meal.
