Ingredients
- 1 c. rice
- 2 c. light cream
- 2 c. milk
- 1 c. sugar
- 1/4 tsp. salt
- 2 tsp. vanilla
- 5 egg yolks
- 1 c. whipping cream
Method
- In top of double boiler, mix rice, light cream, milk, sugar and salt.
- Cover and cook 1 to 1 1/2 hours, stirring occasionally. Lightly mix egg yolks with vanilla and slowly add to hot rice, stirring constantly.
- Cook a few minutes to thicken.
- Empty into bowl.
- Cover and refrigerate, stirring occasionally.
- Whip cream and add to cold rice.
- May be served with strawberry or other fruit sauce, if desired.
- Serves 6.
