Ingredients

  • 1 c. rice
  • 2 c. light cream
  • 2 c. milk
  • 1 c. sugar
  • 1/4 tsp. salt
  • 2 tsp. vanilla
  • 5 egg yolks
  • 1 c. whipping cream

Method

  • In top of double boiler, mix rice, light cream, milk, sugar and salt.
  • Cover and cook 1 to 1 1/2 hours, stirring occasionally. Lightly mix egg yolks with vanilla and slowly add to hot rice, stirring constantly.
  • Cook a few minutes to thicken.
  • Empty into bowl.
  • Cover and refrigerate, stirring occasionally.
  • Whip cream and add to cold rice.
  • May be served with strawberry or other fruit sauce, if desired.
  • Serves 6.
