Ingredients
- 4 tenderloin steaks (8 oz. each)
- 4 slices bacon
- 1 Tbsp. mixed peppercorns (pink, green, black and white)
- 1 tsp. thyme
- 2 Tbsp. cognac
- seasoned salt to taste
Method
- Wrap bacon slice around edges of each steak.
- Coarsely grind pepper and mix with thyme and salt.
- Press 1/2 teaspoon onto both sides of steaks.
- Drizzle cognac over both sides of steaks.
- Cover and marinate at least 2 hours (overnight is better).
- Grill, panfry or boil to desired doneness but be sure to sear both sides, then lower temperature to finish cooking.
