Ingredients

  • 4 tenderloin steaks (8 oz. each)
  • 4 slices bacon
  • 1 Tbsp. mixed peppercorns (pink, green, black and white)
  • 1 tsp. thyme
  • 2 Tbsp. cognac
  • seasoned salt to taste

Method

  • Wrap bacon slice around edges of each steak.
  • Coarsely grind pepper and mix with thyme and salt.
  • Press 1/2 teaspoon onto both sides of steaks.
  • Drizzle cognac over both sides of steaks.
  • Cover and marinate at least 2 hours (overnight is better).
  • Grill, panfry or boil to desired doneness but be sure to sear both sides, then lower temperature to finish cooking.
