Ingredients
- 1 1/2 c. rice
- 3 c. water
- 8 oz. sour cream
- 1 small can green chilies
- 1 to 2 Tbsp. pimentos
- 8 oz. Monterey Jack cheese, grated
Method
- Cook rice in water (1/2 to 1 teaspoon salt). Bring rice to boil; cover and cook seventeen minutes or until done.
- Layer in baking dish 1/2 of rice, 1/2 of sour cream mixed with green chilies and pimentos and 1/2 of grated cheese. Repeat layers. Bake for 30 minutes at 350°.
