Ingredients

  • 1 1/2 cups brown sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups flour
  • 1 cup buttermilk or 1 cup sour milk
  • 1 1/2 - 2 cups rhubarb, cut into small pieces
  • Topping
  • 1/2 cup sugar
  • 1 teaspoon cinnamon

Method

  • Mix brown sugar, butter, egg and vanilla.
  • Add baking soda, salt, flour and buttermilk.
  • Mix until fluffy.
  • Add rhubarb.
  • Place batter in a 9x13 inch GLASS pan.
  • Mix sugar and cinnamon together and sprinkle on top.
  • Bake at 350 degrees Fahrenheit for 40 minutes.
