Ingredients
- 1 5 lb can whole green chiles
- 2 lbs lean ground beef
- 1 lb monterey jack cheese
- 4 eggs
- 1/4 C milk
- 2 Tbsp flour
Method
- Drain chiles
- reserve liquid.
- Slice chiles lengthwise. so they can be "stuffed"
- Slice cheese into 1/4" strips
- Fry beef, and season as desired. Stuff chiles with beef and strips of cheese.
- In separate bowl.. combine eggs, milk and reserved chile juice,& flour. whisk until thickened.
- Grease 9x 12 baking pan.. place stuffed chiles in pan..
- pour egg mixture over the stuffed chiles .bake at 325 for 40 minutes
