Ingredients

  • 1 5 lb can whole green chiles
  • 2 lbs lean ground beef
  • 1 lb monterey jack cheese
  • 4 eggs
  • 1/4 C milk
  • 2 Tbsp flour

Method

  • Drain chiles
  • reserve liquid.
  • Slice chiles lengthwise. so they can be "stuffed"
  • Slice cheese into 1/4" strips
  • Fry beef, and season as desired. Stuff chiles with beef and strips of cheese.
  • In separate bowl.. combine eggs, milk and reserved chile juice,& flour. whisk until thickened.
  • Grease 9x 12 baking pan.. place stuffed chiles in pan..
  • pour egg mixture over the stuffed chiles .bake at 325 for 40 minutes
