Ingredients

  • 1 cup red lentils
  • olive oil to taste
  • 1 carrot
  • 1 onion
  • 2 garlic cloves
  • 1 tomato
  • 1/2 teaspoon ginger powder
  • 1 tablespoon tomato paste
  • 1/2 vegetable bouillon cube
  • water
  • salt to taste
  • 1/2 lemon juice

Method

  • Stew the chopped onion, diced tomato, and carrot slices in a little water.
  • Add the minced garlic, ginger, and salt. Simmer for a few minutes to bring out the flavors.
  • Add the lentils, tomato paste, bouillon cube, and enough water to cover (or slightly more) the lentils.
  • Simmer until the lentils are cooked, from 10 to 15 minutes.
  • To serve, sprinkle with lemon juice, and sprigs of pennyroyal.
