Ingredients

  • 1 1/4 c. sugar
  • 1/2 c. vegetable oil
  • 3 eggs
  • 2 tsp. vanilla
  • 2 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 2 c. grated carrots
  • 1/2 c. raisins
  • 1/2 c. coconut
  • 1/2 c. diced raw apple

Method

  • Combine sugar, oil, eggs and vanilla in a large bowl; set aside.
  • In another bowl, sift together flour, baking powder, salt and cinnamon.
  • Add to liquid ingredients and stir until just moistened.
  • Gently fold in carrots, raisins, coconut and apple.
