- 16 oz. dried red or kidney beans
- 2 lbs smoked sausage
- 6 oz. salt pork or 6-8 strips bacon
- 6-8 garlic cloves, minced
- 1 yellow onion, chopped
- 2 rubs celery, finely chopped
- 1 bell pepper, finely chopped
- 2 tsp cumin
- 2 bay leaves
- 1 tsp black pepper
- 1/2-1 tsp cayenne pepper
- 1 can crushed tomatoes
- 3/4 oz. chicken bouillon
- 2 cups water
- 8 servings hot cooked rice
Method
- Prepare beans by soaking overnight or boiling the day to make it.
- Cut sausage in half length then in bite size pieces.Cut salt pork or bacon in pieces and brown with sausage in skillet. When done remove and put aside. Add garlic, onion, celery and bell pepper. When veggies start to soften add cumin, bay leaf, black pepper and cayenne. Add tomatoes, water and boullion and bring back to a boil.
- In crock pot or on stove add all ingredients except rice together. Cook in crock pot 6-8 hours or on stove 2 hours or until beans are soft.
- Serve over rice.
