- 4 egg yolks
- 2 tablespoons lemon juice
- 1/4 teaspoon salt
- Dash of pepper
- 1/2 cup butter, melted
Method
- Combine egg yolks, lemon juice, salt, and pepper in container of an electric blender; process at high speed until thick and lemon colored.
- Turn blender to low speed; add butter to yolk mixture in a slow, steady stream. Turn blender to high speed; process until thickened (about 30 seconds).
