Ingredients

  • 1 c. sugar
  • 1/4 c. cornstarch
  • 1 1/2 c. cold water
  • 3 egg yolks, beaten
  • 1/4 c. fresh lemon juice
  • 1 Tbsp. margarine
  • grated peel of 1 lemon
  • 1 baked pie crust
  • 3 egg whites for meringue

Method

  • Mix sugar and cornstarch together.
  • Add cold water.
  • Cook in microwave, stirring often.
  • When it is a medium consistency, add egg yolks, lemon juice and rind.
  • Return to microwave and cook until thick.
  • If too thick, use hand blender to smooth out.
  • Add margarine.
  • Pour into pie crust.
  • Beat egg whites and 1/3 cup sugar.
  • Spread meringue to hot pie, sealing to sides.
  • Bake at 350° for 15 to 20 minutes, until brown.
