Ingredients
- 1 c. sugar
- 1/4 c. cornstarch
- 1 1/2 c. cold water
- 3 egg yolks, beaten
- 1/4 c. fresh lemon juice
- 1 Tbsp. margarine
- grated peel of 1 lemon
- 1 baked pie crust
- 3 egg whites for meringue
Method
- Mix sugar and cornstarch together.
- Add cold water.
- Cook in microwave, stirring often.
- When it is a medium consistency, add egg yolks, lemon juice and rind.
- Return to microwave and cook until thick.
- If too thick, use hand blender to smooth out.
- Add margarine.
- Pour into pie crust.
- Beat egg whites and 1/3 cup sugar.
- Spread meringue to hot pie, sealing to sides.
- Bake at 350° for 15 to 20 minutes, until brown.
