Ingredients

  • 1 TBl. Olive oil
  • 1/2 C. Red Onion-chopped
  • 1/2 tsp. Dried Thyme
  • 1/4 tsp salt
  • 1 lb-(4)Chicken Breast-Slightly pounded, skinned & boned
  • 1/3 c. Seedless raspberry preserves
  • 2 Tbl. Balsamic vinegar
  • 1/4 tsp. Pepper
  • optional...
  • Brown rice- Instant
  • Broccoli or asparagus-Steamed

Method

  • Heat oil in non stick skillet. Saute onion to soften. 3 min
  • Mix thyme & 1/4 tsp salt Sprinkle over chicken. Add chicken to skillet- cook 6 min each side. Remove & keep warm.
  • Add preserves, vinegar & pepper. Stir to melt and combine. Scraping any bits in the pan. Pour over chicken breasts. Serve with rice and green vegetable.
