Ingredients
- 1 TBl. Olive oil
- 1/2 C. Red Onion-chopped
- 1/2 tsp. Dried Thyme
- 1/4 tsp salt
- 1 lb-(4)Chicken Breast-Slightly pounded, skinned & boned
- 1/3 c. Seedless raspberry preserves
- 2 Tbl. Balsamic vinegar
- 1/4 tsp. Pepper
- optional...
- Brown rice- Instant
- Broccoli or asparagus-Steamed
Method
- Heat oil in non stick skillet. Saute onion to soften. 3 min
- Mix thyme & 1/4 tsp salt Sprinkle over chicken. Add chicken to skillet- cook 6 min each side. Remove & keep warm.
- Add preserves, vinegar & pepper. Stir to melt and combine. Scraping any bits in the pan. Pour over chicken breasts. Serve with rice and green vegetable.
