- 1 stick butter
- 1 chopped onion
- 1 c. sliced mushrooms
- 1 chopped green pepper
- 1 1/4 c. raw rice
- 1/4 tsp. nutmeg
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 c. dry white wine
- 3 c. hot water
- 2 Tbsp. chopped parsley
- 1/4 tsp. thyme
- 1/2 bay leaf
- 2 lb. raw shrimp
Method
- In Dutch oven, heat butter; add onion, mushrooms, green pepper, rice, nutmeg, salt and pepper and cook, stirring, until rice is brown.
- Add wine and simmer 5 minutes.
- Add hot water, parsley, thyme and bay leaf; cover and cook 10 minutes, depending on size of shrimp.
- Remove bay leaf and serve immediately.
