Ingredients

  • 1 stick butter
  • 1 chopped onion
  • 1 c. sliced mushrooms
  • 1 chopped green pepper
  • 1 1/4 c. raw rice
  • 1/4 tsp. nutmeg
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 c. dry white wine
  • 3 c. hot water
  • 2 Tbsp. chopped parsley
  • 1/4 tsp. thyme
  • 1/2 bay leaf
  • 2 lb. raw shrimp

Method

  • In Dutch oven, heat butter; add onion, mushrooms, green pepper, rice, nutmeg, salt and pepper and cook, stirring, until rice is brown.
  • Add wine and simmer 5 minutes.
  • Add hot water, parsley, thyme and bay leaf; cover and cook 10 minutes, depending on size of shrimp.
  • Remove bay leaf and serve immediately.
