Ingredients

  • 1 c. all-purpose flour
  • 1/4 c. sugar
  • 1/3 c. butter
  • 2 large eggs
  • 1 c. sugar
  • 2 Tbsp. all-purpose flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 Tbsp. grated orange rind
  • 2 Tbsp. orange juice
  • 3/4 c. chopped raisins
  • 1/2 c. flaked coconut
  • 2 tsp. orange juice
  • 2 tsp. lemon juice
  • 1 1/2 tsp. softened butter
  • 1 c. powdered sugar

Method

  • Combine 1 cup flour and 1/4 cup sugar; cut in 1/3 cup butter with a pastry blender until mixture is crumbly.
  • Press into bottom of a lightly greased 9-inch square pan.
  • Bake at 350° for 15 minutes.
  • Combine eggs and next 8 ingredients, stirring until blended.
  • Pour over baked crust.
  • Bake batter at 350° for 20 to 25 minutes.
