Ingredients

  • 1 1/2 c bran
  • 1/2 c milk
  • 1/2 c all purpose flour
  • 1/2 c sugar
  • 1 egg beaten
  • 2 Tbsp butter melted
  • 1 c chopped pecans
  • 1/2 c light or dark raisins

Method

  • Preheat oven to 400 degrees.
  • Grease a 2 inch muffin tin. Combine bran and milk in a bowl and let sit for 5 minutes.
  • Then mash with the back of spoon.
  • Sift together the flour and sugar and add to bran.
  • Add the beaten egg and the melted butter and stir until well blended, Do not beat.
  • Stir in the nuts and raisins. Divide batter amount the muffin cups.
  • Bake 15 to 20 minutes. Makes 12 muffins.
