Ingredients
- 1 1/2 c bran
- 1/2 c milk
- 1/2 c all purpose flour
- 1/2 c sugar
- 1 egg beaten
- 2 Tbsp butter melted
- 1 c chopped pecans
- 1/2 c light or dark raisins
Method
- Preheat oven to 400 degrees.
- Grease a 2 inch muffin tin. Combine bran and milk in a bowl and let sit for 5 minutes.
- Then mash with the back of spoon.
- Sift together the flour and sugar and add to bran.
- Add the beaten egg and the melted butter and stir until well blended, Do not beat.
- Stir in the nuts and raisins. Divide batter amount the muffin cups.
- Bake 15 to 20 minutes. Makes 12 muffins.
