Ingredients

  • 3 c. sugar
  • 1 c. salad oil
  • 3 eggs
  • 2 c. pumpkin
  • 3 c. flour
  • 1/2 tsp. salt
  • 1 tsp. nutmeg
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. cloves
  • 1 tsp. cinnamon
  • 1 c. chopped dates

Method

  • Use large bowl.
  • Beat oil and sugar until well blended.
  • Add eggs, one at a time.
  • Add pumpkin and beat well.
  • Sift flour and spices and add to pumpkin mixture.
  • Add dates and nuts.
  • Pour batter into 2 well-greased loaf pans.
  • Line the bottom of pans with wax paper.
  • Bake at 350° for 1 hour and 15 minutes.
  • Cool in pan.
  • Serve plain or warm with whipped cream.
  • Freezes well. Makes 2 loaves.
