Ingredients

  • 1 c. uncooked oat bran cereal
  • 1 1/2 c. unsifted flour
  • 1/4 c. sugar
  • 3 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1 egg
  • 1 c. milk
  • 1/4 c. salad oil
  • 1 tsp. grated orange peel
  • 1 small apple, peeled and diced
  • 1/2 c. chopped dates
  • 1/2 c. chopped walnuts

Method

  • In a large bowl, combine oat bran, flour, sugar, baking powder, baking soda, salt and cinnamon.
  • Mix thoroughly; set aside.
  • In a small bowl, lightly beat egg with a fork, then stir in milk, salad oil and grated peel.
  • Pour all at once into flour mixture.
  • Stir just until moistened.
  • Fold in apples, dates and walnuts.
  • Fill 12 greased or paper cup lined muffin cups 2/3 full.
  • Bake in preheated 400° oven until done, about 20 minutes.
