Ingredients

  • olive oil
  • 1/2 onion finely chopped
  • 9/16 pound ground beef
  • salt
  • ground black pepper
  • 1 3/4 cups crushed tomatoes canned
  • 13/16 cup pumpkin sliced into small cubes
  • 1 garlic clove minced
  • 1 1/8 cups red beans canned
  • 1 9/16 cups corn kernels cooked

Method

  • Heat a dash of olive oil in a large cooking pot at low flame.
  • Add the onion, ground beef, and salt and pepper to taste to the cooking pot. Stir occasionally until the onion looks transparent.
  • Add the crushed tomatoes, pumpkin, and garlic, and cook for 20 minutes while stirring occasionally.
  • Add the red beans and corn kernels to the pot, and cook for 5 minutes while stirring occasionally.
  • Turn off the stove and serve.
