Ingredients
- olive oil
- 1/2 onion finely chopped
- 9/16 pound ground beef
- salt
- ground black pepper
- 1 3/4 cups crushed tomatoes canned
- 13/16 cup pumpkin sliced into small cubes
- 1 garlic clove minced
- 1 1/8 cups red beans canned
- 1 9/16 cups corn kernels cooked
Method
- Heat a dash of olive oil in a large cooking pot at low flame.
- Add the onion, ground beef, and salt and pepper to taste to the cooking pot. Stir occasionally until the onion looks transparent.
- Add the crushed tomatoes, pumpkin, and garlic, and cook for 20 minutes while stirring occasionally.
- Add the red beans and corn kernels to the pot, and cook for 5 minutes while stirring occasionally.
- Turn off the stove and serve.
