Ingredients

  • 1 c. cornmeal
  • 1 Tbsp. butter
  • 1 1/2 tsp. salt
  • 2 c. boiling water
  • 4 egg yolks
  • 1/2 c. milk
  • 1/2 c. all-purpose flour
  • 2 Tbsp. sugar
  • 2 tsp. baking powder
  • 4 egg whites, stiffly beaten

Method

  • Preheat oven to 350°.
  • Grease a 2-quart casserole.
  • In saucepan, gradually add cornmeal, butter and salt into boiling water.
  • Cook over low heat, stirring constantly, until thick. Remove from heat.
  • Beat egg yolk with milk; gradually stir into cornmeal mixture.
  • Mix flour with sugar and baking powder.
  • Add to cornmeal mixture; beat until well blended.
  • Fold in egg whites. Bake 45 minutes or until golden brown.
  • Spoon from casserole and serve hot with butter.
