Ingredients
- 1 c. cornmeal
- 1 Tbsp. butter
- 1 1/2 tsp. salt
- 2 c. boiling water
- 4 egg yolks
- 1/2 c. milk
- 1/2 c. all-purpose flour
- 2 Tbsp. sugar
- 2 tsp. baking powder
- 4 egg whites, stiffly beaten
Method
- Preheat oven to 350°.
- Grease a 2-quart casserole.
- In saucepan, gradually add cornmeal, butter and salt into boiling water.
- Cook over low heat, stirring constantly, until thick. Remove from heat.
- Beat egg yolk with milk; gradually stir into cornmeal mixture.
- Mix flour with sugar and baking powder.
- Add to cornmeal mixture; beat until well blended.
- Fold in egg whites. Bake 45 minutes or until golden brown.
- Spoon from casserole and serve hot with butter.
