Ingredients

  • 1 c. margarine
  • 1 c. granulated sugar
  • 1 c. packed brown sugar
  • 4 eggs
  • 1 (16 oz.) can pumpkin
  • 2 3/4 c. flour
  • 1 Tbsp. pumpkin pie spice
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 c. chopped pecans

Method

  • Combine margarine and sugars.
  • Add eggs, one at a time, mixing well after each addition.
  • Blend in pumpkin.
  • Add combined dry ingredients, mixing just until moistened.
  • Stir in pecans.
  • Pour into two greased and floured 9 x 5-inch loaf pans.
  • Bake at 350° for 1 hour and 10 minutes or until wooden pick inserted in center comes out clean.
  • Cool 5 minutes.
  • Remove from pan.
  • Makes 2 loaves.
