Ingredients

  • 1 1/2 c. and 2 tsp. sugar, divided
  • 1 tsp. cinnamon
  • 8 c. peaches, peeled and sliced
  • 1/2 c. shortening
  • 3 Tbsp. butter, melted
  • 1 c. chopped pecans
  • 2 Tbsp. cornstarch
  • 1 c. water
  • 2 c. self-rising flour
  • 1/2 c. buttermilk
  • 1/4 c. packed brown sugar

Method

  • In a saucepan, mix 1 1/2 cups sugar, cornstarch, cinnamon and water.
  • Stir until smooth.
  • Add peaches.
  • Cook and stir until thickened and bubbly.
  • Cook and stir for 2 minutes more.
  • Pour into a lightly greased 9 x 13 x 2-inch baking dish.
  • Set aside.
