Ingredients

  • 1 c. very dry bread crumbs
  • 2/3 c. Parmesan cheese, grated (dry, not fresh)
  • 1 tsp. salt (optional)
  • 1/4 tsp. pepper
  • 1/4 tsp. parsley
  • 1/8 tsp. garlic powder
  • 1/8 tsp. paprika
  • 4 chicken breasts, halved
  • 1/2 c. melted butter or skim milk
  • juice of 1/2 lemon

Method

  • Combine crumbs, Parmesan cheese and seasonings.
  • Dip chicken in butter (or milk), then coat with crumb mixture.
  • Sprinkle with lemon.
  • Refrigerate 1/2 hour.
  • Bake at 350° for 45 minutes to 1 hour.
  • (If boneless, bakes in 20 to 30 minutes.)
