- 1 lb. sweet Italian sausage (I use 1/2 sweet and 1/2 hot from Howies)
- 1/2 c. chopped onion
- 1 crushed garlic clove
- 1 (6 oz.) can tomato paste
- 1 (6 oz.) can tomato sauce
- 1 2/3 c. water (I substitute about 1/2 c. red wine for the water)
- 1 tsp. oregano leaves
- 1/2 tsp. basil leaves
- 1/2 tsp. crushed rosemary
- 2/3 c. (10 oz. pkg.) cooked and thoroughly drained, frozen, chopped spinach
- 2 c. (1 pt.) Ricotta cheese
- 1 c. grated Parmesan cheese
- 1 1/2 c. (6 oz.) shredded Mozzarella cheese
- 1 slightly beaten egg
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 10 cooked, drained lasagne noodles
Method
- Remove casings from sausage and crumble.
- Brown sausage with onion and garlic in a deep saucepan.
- Pour off excess fat.
- Add tomato paste and tomato sauce, water (wine), oregano, basil and rosemary.
- Cover and boil gently for 20 minutes.
