Ingredients

  • 1 lb. sweet Italian sausage (I use 1/2 sweet and 1/2 hot from Howies)
  • 1/2 c. chopped onion
  • 1 crushed garlic clove
  • 1 (6 oz.) can tomato paste
  • 1 (6 oz.) can tomato sauce
  • 1 2/3 c. water (I substitute about 1/2 c. red wine for the water)
  • 1 tsp. oregano leaves
  • 1/2 tsp. basil leaves
  • 1/2 tsp. crushed rosemary
  • 2/3 c. (10 oz. pkg.) cooked and thoroughly drained, frozen, chopped spinach
  • 2 c. (1 pt.) Ricotta cheese
  • 1 c. grated Parmesan cheese
  • 1 1/2 c. (6 oz.) shredded Mozzarella cheese
  • 1 slightly beaten egg
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 10 cooked, drained lasagne noodles

Method

  • Remove casings from sausage and crumble.
  • Brown sausage with onion and garlic in a deep saucepan.
  • Pour off excess fat.
  • Add tomato paste and tomato sauce, water (wine), oregano, basil and rosemary.
  • Cover and boil gently for 20 minutes.
