Ingredients

  • 1 pkg. dry yeast (RapidRise)
  • 1/2 c. hot mashed potatoes
  • 1/4 c. shortening
  • 1/4 c. sugar
  • 1 tsp. salt
  • 1 c. scalded milk
  • 1 egg
  • 4 to 4 1/2 c. sifted flour

Method

  • Combine potatoes, shortening, sugar, salt and hot milk.
  • Cool until lukewarm.
  • Add egg and yeast.
  • Stir in flour.
  • Beat well. Knead on slightly floured surface until smooth and elastic.
  • Place in lightly greased bowl, turning once to grease surface.
  • Cover and let rise until double (about 1 hour).
  • Punch down and let rise 10 minutes.
  • Roll and cut into shape.
  • Place on greased baking sheet. Cover and let rise until almost double (about 1 hour). Bake in hot oven at 400° for 10 to 12 minutes. Brush tops with butter.
