Ingredients

  • 2 Tbsp. olive oil
  • 1 onion, chopped Safeway 1 lb For $1.49 thru 02/09
  • 2 cloves garlic, minced
  • 1 pkg. (8 oz.) sliced fresh mushrooms
  • 1/4 cup fat-free reduced-sodium chicken broth
  • 1/4 cup butter
  • 1 pkg. (32 oz.) ORE-IDA Diced Hash Brown Potatoes
  • 1/2 tsp. pepper
  • 1/2 cup chopped fresh parsley

Method

  • Heat oil in large skillet on medium-high heat.
  • Add onions and garlic; cook and stir 2 to 3 min.
  • Add mushrooms; cook 2 to 3 min.
  • or until tender.
  • Add broth; cook 3 to 4 min.
  • or until liquid has evaporated.
  • Remove onion mixture from skillet; set aside.
  • Wipe skillet clean.
  • Melt butter in skillet on medium-high heat.
  • Add potatoes; cook 20 min.
  • or until browned, stirring frequently.
  • Stir in onion mixture, pepper and parsley.
