Ingredients

  • 6 to 8 potatoes
  • 1 medium onion
  • 1 can cream of mushroom soup
  • 8 oz. sour cream
  • 1 stick butter
  • 1 1/2 c. sharp Cheddar cheese
  • corn flake crumbs

Method

  • Slice potatoes into 1/4-inch thick slices and boil.
  • Cut up onion and cook in microwave oven for about 2 minutes.
  • Mix potatoes, onion, soup, sour cream, 1/2 stick of butter (melted) and cheese.
  • Pour into buttered 9 x 11-inch casserole dish.
  • Top with corn flake crumbs and 1/2 stick of melted butter.
  • Bake at 350° for 35 minutes.
