Ingredients
- 3 large potatoes, peeled and finely grated
- 5 large carrots, peeled and coarsely grated
- 2 large onions, peeled and coarsely grated
- 6 eggs, beaten
- 1/4 c. vegetable oil
- 3/4 c. matzoh meal
- salt and pepper to taste
Method
- Toss together the potatoes, carrots and onions. Stir the eggs and oil; add to vegetables. Blend in the matzoh meal.
- Pour into well-greased 3-quart casserole or loaf pan. Bake 1 hour at 350°. Makes 8 to 10 servings.
