Ingredients
- 1 medium potato, cooked
- pinch of salt
- 1 Tbsp. butter
- 1 tsp. vanilla
- 2 lb. 10x sugar
- peanut butter
Method
- Mash potato while hot; add salt, butter and vanilla.
- Beat until fluffy.
- Add sugar, gradually, stirring with spoon until mixture is pliable but not too stiff to roll out.
- Place on waxed paper, flour and roll out.
- Spread with peanut butter and roll up about the size of a quarter in diameter.
- Cut 1/4 inch thick. Looks like pinwheels.
