Ingredients

  • 1 1/2 pounds red potatoes
  • 1/4 cup mayonnaise
  • 1/4 cup whole grain mustard
  • 1/4 cup prepared horseradish (or fresh grated)
  • 1/4 cup pickle juice
  • 1 medium onion
  • 2 half sour pickles
  • Salt and pepper

Method

  • Quarter the potatoes and boil until just cooked.
  • Drain and rinse.
  • Mix together mayonnaise, mustard, horseradish, and pickle juice.
  • Transfer still warm potatoes to mixing bowl and blend in dressing.
  • Chop pickles and onions to 1/4-inch dice and add.
  • Season with salt and pepper.
  • Serve chilled.
